What a week!

I knew last week I was going to be busy but I didn’t realize just how true that would be!!

I have been trying to get on here since Friday to update the blog, but every time something happens. I am multitasking now to get on here to write. Such is life I guess!

"Mama's Meatballs". My own meatball creation...

“Mama’s Meatballs”. My own meatball creation…

Mama’s Meatballs (version 1)
1 large sweet potato
1 small onion
2 cloves of garlic
Rough chop the sweet potato and onion and throw in with the garlic in the food processor. Process till it is more or less grated texture.
1 small apple cored, rough chopped
A small handful of raisins (I could also see using dried cranberries here or both)
Add these to the food processor and process till uniform texture.
Add 1/4 cup silvered almonds and lightly process

In large bowel beet 2 eggs, add 1 teaspoon salt, 1/2 teaspoon pepper, 1 tablespoon cinnamon. Add veggies. Then mix in 1 pound of meat (we have done this with ground beef and pork and both turned out well!).

We use a 2 tablespoon scoop and place on a parchment lined baking sheet. Bake at 425 for 20 minutes. 🙂

My birthday meal, I also had a lobster bisque. This is pumpkin ravioli with sweet potato, dried cranberries, spinach, walnuts and a shallot sauce.

If all of this were not enough, I also was busy trying to finish Nathaniel’s fleece pull overs that I made him. I will try to get a photo of those soon. I was also making some for Max. Then I have to get busy on a coat for Nathaniel as well as some pants.

I have also realized this week that we don’t have many photos of Fenway lately. So I hope to fix that. He is still around though he is very bushy right now. That will end soon as well.
