Max’s birthday… party that is.

Here is Max’s birthday dinner. I had to make things Paleo for Nathaniel.

The spaetzle was based on this recipe but I used 2 tablespoons of coconut flour and 1 cup of arrowroot in place of the flour. I also omitted the cheese altogether. The result was a bit gummy. I think I could have used more coconut flour to absorb some more liquid. However since I had never made Spaetzle (Paleo or not) it was a good first attempt! I liked the added sweet potato as it did give it something.

The breading for the schnitzel was equal parts crushed pork rinds and almond meal/flour. We seasoned this breading with salt and pepper and dipped the meat into egg then into the breading. The gravy was left over from our turkey that we had on labor day.

Here is the recipe for the German Chocolate cake. I did it exactly like she said only I used parchment rounds in the bottom of the cake pans to make sure they would come out well. Not sure if they were needed but thought the insurance policy was worth it. 🙂 I tripled the recipe for both the cake and the frosting. As you can see I should have quadrupled the frosting recipe. This cake is VERY rich and tasty. We will definitely make it again and considering that it is Paleo, and a 3 layer cake, it wasn’t that hard to make.
