Thanksgiving part 2

I know this is late but honestly with a 4 month old, you never know what you are going to get.

Turkey just off the Egg.

Getting the turkey out of the pan was a challenge. We decided to do it in parts. Here is the legs and wings.

We cooked the turkey (pastured turkey which was fed a soy free diet when needed), in the Big Green Egg. I did a bit of research into how to do this and found Mad Max Turkey and Gravy. This called for using a pan to collect the drippings to make a gravy later on.

Our whole Thanksgiving meal…

As you can see it produced for us a great dark gravy. I followed the recipe to the T though I think I could have made my roux a bit thicker. It produced about 5 cups of gravy that we got to put away (so not including what Tony, Max and I ate). So it is a lot of gravy. Tony said it was the best he has ever had. It also worked well with our Turkey. Sometimes heritage breed turkeys like ours were, have a tendency to get dry. I mean sometimes they stuff stuff into the Butterballs that make it easier to cook without getting dry. The instructions provided a great way to cook the turkey without this happening. As evidence of this, Max actually ate about 1/2 to 3/4 of a turkey leg. I think he really only ate his roll and the turkey leg. Ha ha!

All told we had cranberry sauce that was homemade and tart (cranberries are tart, so why make them taste other wise?), green bean casserole (without dairy, so no canned stuff either, though I did find dairy/soy free french fried onions – yeah I am a glutton ), paleo stuffing (so no bread, soy, or dairy), store purchased rolls, turkey, gravy and mashed potatoes.

I make my mashed potatoes by sight. I peel and boil the potatoes till tender, then drain and add the dairy free/soy free butter – how much is sort of dependent on my mood. When that is all mashed (with a hand masher) then I add some nutritional yeast (no more then 1/4 cup) and almond milk (unsweetened, unflavored) to the consistency that I want. Then I season with salt and pepper. Honestly last night I under salted the potatoes a bit because the gravy (though no salt was added) was perfect with salt and I see gravy as a seasoning to the potatoes.

All of the other recipes I mentioned (other then Mad Max’s) are on our Pinterest “Paleo Recipes” page. We are on there under “Our Unplanned Life”. Not sure if that is one word or not. I will be shortly updating it to reflect what we thought of those recipes but it is safe to say that we all loved them! It was really perfect!

Unrelated note: For any grandparent or anyone else that is looking for past videos that were on the blog, I will be fixing the links soon, but first I am moving all the photos on the blog. This is a huge undertaking and is taking a lot of time. I hope to get the links fixed soon though.

I hope everyone likes the new website. The photo in the background and header I took. I wanted something festive and I am sure I will update them both as time goes on.
