Happy Easter!!
Today I made Carrot Cake. This is completely in our diet and this didn’t even have flour in it. Instead it had almond meal in it. It was very moist and flavorful and you would NEVER know it had no flour in it. The dark spot on it is a raisin. Yum!
I forgot to mention that Max’s blood test came back saying he was normal. However he has curbed some of his chewing recently so I am not sure what is going on. Anyway he is well.
Today we had a lovely day outside as it was just the right temperature out there. I know it is raining while I type this but I really do hope tomorrow has some of the same weather.
