Cookie Week Last Day???

Well I have had a lot of stuff happen in the last 24 hours. Last night while we were waiting for Tony to come home, the power went out. It was dark outside and Max was on the toilet and I wasn’t in the bathroom (hey Fenway was in there so what more did Max need. Haha!). Max freaked out because he is scared of the dark. So I opened the netbook and I had to figure out where there was a candle, flashlight or something. It finally occurred to me that there was 1 candle in the kitchen that I had not put down in the basement yet. I also found the lighter for the BBQ next to it. Sadly the lighter didn’t like working and it took several tries. Finally lit the candle.

I then went around the house (the freaked out dog and kid in tow) and turned off all the power switches I could think of. When all of that happened and the power wasn’t on I realized that I need to get more light around other then just the one small candle. So then I had a choice, do I bring Max into the basement (no lights and a small candle) or do I leave him upstairs in the dark. My choice was to put him in the playpen and open the netbook (therefore light) and search downstairs for the candles. I find them and then I bring them upstairs but they are votive candles and there are no holders. So I grab a plate and put them on it. I light them all and my son who has NEVER blown out birthday candles, starts trying to blow them out!! So then I have to go back into the dark basement and get empty jam jars (from when we can). That solves my problem with blowing out candles.

Luckily dinner was already cooked. I had made rice and dinner was cooked in the oven. We were suppose to have broccoli but that wasn’t happening. Tony comes home as I am dishing out dinner and Max. We eat dinner by candle light and prepare to go to Fenway’s class, when the lights come back on!!!

I learned a few lessons last night. 1) even if your power never goes out you need to have candles around. Never is a lot sooner then I thought. 2) make dinner with time to spare in case the power goes out. Haha!

The power has went out once since last night and I am hoping this is it. We don’t even know why it went out. It wasn’t windy but we did see them working on the lines last night.

So today I was suppose to make a Norwegian cookie. Just one problem, I have 3 eggs and I needed 4. So until I go grocery shopping I can’t make those. So instead I made No Bake Cookies.

Now I have made no-bake cookies a ton of times. And every time I have made them, they got too hard before I could make them all into cookies. These cookies were not that way. They also seem softer, chewier then other cookies I have made. I hope these cookies last till Tony gets home. Ha ha!

As you can see, I did cheat just a bit. I use a scoop to get uniform cookies. However I think it was well worth it.

I will be making my Norwegian cookies but I am not sure when. When I make them I will post photos.
