We decided not to go to church today…

If you look at our car, you can see icicles hanging from it. We thought it better to stay home today.

Last night’s meal was WONDERFUL! I know it may have sounded strange to have fried rice with enchiladas but honestly I think I had a brain fart this week and forgot the name of spanish rice and so we had an east meets west meal. It was still good! I think I could have had a whole bowl of just the fried rice. Great way to use extra veggies and I am really liking the coconut aminos!! It is mildly sweet and salty. Sometimes I think soy sauce is TOO salty. This is just right to me.

The enchiladas we made more like a lasagna then enchiladas. We were not trying to impress anyone so thought this would be easier. Still tasty but not as much work.

I am really looking forward to the sweet pork waffle sliders tonight!

Okay I have a minute so I thought I would go down the run down for the rest of the meals this week (to Friday).

Monday: B – Pumpkin pie porriage (another recipe from the e-book previously mentioned) L – egg salad and guacamole with carrots and celery sticks  D – Hungry man sweet potato casserole

Tuesday: B – Green smoothie (uses greens with fruit to make a smoothie) and whole wheat apple squares (from breakfast book afore mentioned)  L – Left over meat muffins with potato wedges or potato salad (whatever is left over or we want) D – left over sweet potato casserole

Wednesday: B – crustless quiche (recipe in book)  L – seafood salad, popcorn, fruit D – Roasted grape and onion pork chops and Scalloped potatoes (dairy free)

Thursday: B – left over quiche  L – egg salad or fish sandwich, guacamole with carrots and celery  D – left overs

Friday: B – left overs  L – Left overs  D – Asian marinated beef spare ribs and spiced rice pilaf (which was found on my meal planning program)
