Now this is a lot of information!

Okay I wanted to update the blog before now but I am still trying to figure out when I am going to move it. There are a few obstacles in my way and when I move it, it will take me a while to get everything moved over in the way of photos and such so I didn’t want to make more work for myself. However at a certain point I need to just update the blog, so here I am.

It has been a while since I posted his whole body so here is a whole body shot. He is thinner then this lets on, but it gives you an idea with his cow (see previous posts with his cow).

About a week ago I had a hankering (what do you know! That is a word!) for some kettle corn. Well Kettle corn is normally made with butter or some oil that I likely don’t have. So I went out and tried to do it myself. The previous times I have done this were a complete disaster, to the point that for a while, Max wouldn’t eat any kettle corn (even store bought stuff) unless I blew on it for him and tried a bit myself. The problem with most recipes I have found is that you make the popcorn at the same time as the kettle goodness. This sets you up for failure if you don’t know how to pop popcorn on the stove top without burning it in the first place. So I made mine separately and combined.

Here is my recipe:
1/3 cup coconut oil
1 cup rapadura (or other sugar that is granulated)
1/3 cup coconut milk (full fat… the stuff in a can)
Heat till boiling then about 5 minutes more. Stirring the whole time.
Remove from heat and add:
2 teaspoons salt
1/2 teaspoon baking soda
Immediately pour into a bowl with 1/2 cup (size pre popped) popped popcorn and stir to combine.

The oil in this makes it so it doesn’t really even stick together that bad. I love the sweet salty combination of it. Here it is.

Okay these next ones are quite telling of Max. This first photo is of Max’s thankful tree. He had to write something (okay daddy wrote it) on every leaf for what he is thankful for. Max chose:

  • Mommy
  • Daddy
  • Nathaniel
  • Dog
  • Backhoe (toy that he plays in the yard with)
  • Toys
  • Hole (where he plays with the backhoe while in the back yard)
  • School Stuff
  • Home
  • and last but not least “Living” which I assume that means he is thankful for being alive. Quite insightful for a 5 year old.

Now to today. This is Nathaniel prior to getting his ear tag removed (notice it is on his ear in photo).

And here he is after the ear tag removal. He doesn’t look much different but I am sure it will be good for him in the long run. Poor baby!!

Finally here is Nathaniel “talking” note: he has since really found his voice and now likes to scream as part of talking. I still need to get that on video.
